Consumption of saturated fat is linked with the increase of cardiovascular disease, whilst the consumption of monounsaturated and polyunsaturated fats decrease these risks. Ethyl cellulose (ETHOCEL™) is unique amongst food approved cellulose ethers as it is soluble in edible oils and aliphatic alcohols, and practically insoluble in water. Due to the restricted mobility and migration of the oil inside the polymer network, ethyl cellulose structured healthy oils may potentially provide the solid-like properties of saturated triacylglycerols without the high levels of saturated fatty acids.
