The aim of this chapter is to understand the interactions, configurations, microstructure and micromechanics of various colloids confined at fluid–fluid interfaces. This chapter bridges the interactions between interface trapped particles at the single particle level to their macroscopic behaviours and properties, which will be critical in controlling the rheology of interfaces and stabilizing multiphasic fluid mixtures such as emulsions and foams using colloidal particles.
