Many Pickering emulsions are simple spherical emulsions because surface tension gives liquid droplets a spherical shape, minimizing the surface area for a given volume. However, supracolloidal systems with complex structures have been produced to create new materials, such as multiple emulsions, non-spherical emulsions and bicontinuous structures. In this chapter, we discuss these complex systems stabilized by solid particles.
