It has been more than a century since the first discovery of Pickering emulsions, which play a critical role in many areas, including food science, controlled release systems, functional materials, etc. However, in the literature, most studies related to Pickering emulsions are limited to the realm of single Pickering emulsions. Until very recently, research into multiple Pickering emulsion raises, not exaggerate to say, their first flourish. In this chapter, to offer a better understanding and promote wider application of multiple Pickering emulsions in the area of functional materials, we highlight this construction-complicated and application-potential holder systematically in terms of preparation, applications and prospects.
