Grinding, degassing, packaging and storage are essential technological steps to obtain roasted coffee in perfect conditions to brew. To meet total quality requirements of the final product, roasters must assess the grinding point of each blend, select proper packaging materials and techniques and control storage conditions to maintain coffee flavor quality, a major factor in purchase decision. Packaging is important for marketing communications, and influences the consumer's perceptions and evaluations about the coffee product. In this chapter, we will discuss the general aspects concerning the effect of grinding, packaging and storage in the quality of the roasted coffee and brew.
