Pickering emulsions are especially attractive in pharmaceutical and cosmetic sciences because stabilisation of droplets by solid particles dramatically improves the stability of liquid droplets with respect to coalescence. Such remarkable behavior was originally identified by S.U. Pickering in 1907. The solid particles are adsorbed at the oil-water interface by means of partial wetting behaviour of the solid particles' surface by water and oil.
