In order to know how health claims and symbols affect consumer behaviour, the right methods need to be used to study such effects. As part of the EU-funded project CLYMBOL, a methodological toolbox was developed. In this chapter, we review existing literature on consumers and health claims and the methods applied evaluated based on a set number of criteria. The objective has been to derive recommendations for the use of methods in studying the effects of health claims and symbols, for specific research questions, by specific stakeholder groups.
