This final chapter offers a future perspective on DNA techniques to detect food authenticity. It looks at the global pressures on the food system, how the food system landscape is changing, the effects on food fraud and the technological and legislative developments that are emerging to meet these new challenges. Finally, it assesses the role of policy makers, enforcers and industry in assuring consumer confidence and the integrity of the food supply.
