This chapter allows us to locate olive production in the world, explain what is required for successful production, and to discuss the various design choices in planting a grove and the various cultivars (cultured varietals) of the olive tree. The chemical stories in Chapter 2 focus on the composition of the pigments that allow the trees to absorb light.
