Harvest is a very active time in the grove, with many techniques applied, depending on the location. Deciding when to harvest and how to get the fruit off the tree are complex decisions with many solutions, some of which can lead to a prize winning oil and others which can be disastrous for the oil. The chemical story here continues with the biochemical synthesis of the oil.
