The conditions under which the chemical compounds in tea leaves are extracted can change the composition of the final infusion. The effects of water temperature, the length of the infusion, and the size of the tea leaves are considered here. The development of tea scum and tea cream in these infusions is outlined. Uses for the exhausted leaves and methods for creating instant teas are briefly addressed.
